Rice and Ground Beef stuffed-green-peppers



Ingredients

4 Medium sized green peppers
1 quart boiling water
1 teas salt to water
1 Cup long grain white rice


1 pound hamburger
1/2 teas salt
1/4 teas garlic powder
1/4 teas celery salt
1 onion
3/4 Cup cheddar cheese

Preparation
Add salt to 1 quart boiling water,
Cut off tops of green peppers scooping out seeds.
Place peppers in boiling water and cover with lid.
Boil on low heat for 8 minutes .
Use this water to boil the rice in.

Remove peppers and set aside in baking dish and
add 1 Cup long grain white rice to boiling water. Cover with lid.
Bring to boil and turn stove down to low heat. Continue boiling for 20 minutes or until rice is done.
Keep lid on while boiling and rice will be fluffy. It will generally continue boiling even on low heat as long as the lid is on it.

In the meantime,Fry 1 pound hamburger in skillet,
season with salt, garlic & celery salt
Add 1 chopped onion and saute` until transparent.
Add this mixture to the cooked rice.
Add 3/4 Cup cheddar cheese and mix thoroughly

Place cooked Green Peppers in oiled baking pan
Fill Green Peppers with hamburger mixture and
add remaining 1/4 Cup cheese to cover top of peppers
Bake in the oven at 350 for 15 minutes.
Serve with spaghetti sauce topping.

Spaghetti Sauce topping

Using Tomatoes from your garden,
puree a dozen medium sized tomatoes in blender.
Add 1 medium onion chopped
Add 2 minced garlic cloves
Add 1 teaspoon fresh chopped basil
1/2 teas fresh chopped oregano
1/4 to 1/2 teas salt
Add tip of 1 cayenne pepper (optional)
Add 1 Jalapeno Pepper, seeded and chopped (optional)

Bring to boil pureed juice and cook on low heat for 15-20 minutes on stove.
Serve sauce over stuffed peppers.
