sausage-dressing

Kathleen M.Walker's recipe

This sausage-dressing recipe of my sister's is great with chicken or a turkey, but Kathleen's delicious dressing recipe can be used in her garden vegetable casserole recipe (HERE)

First Sauté:
1 cube butter
¾ cup onion, finely chopped
Mix with:
12 + cups bread crumbs (I like Pepperidge Farms crumbs + any other dried bread cubes)
1 ½ cups celery & leaves, diced
1 tsp. pepper
1 Tablespoon poultry seasoning
1 tsp. marjoram
1 # sausage, browned & drained [do ahead]
[1 tsp. salt only if no sausage is used]
1 can water chestnuts, drained & chopped large
½ cup broken pecans, keep rather large pieces

Then mix all together & stuff turkey lightly. Enough for an 18 pound turkey with leftovers to freeze for later use.

If baked in baking dish, add 2-3 cups chicken broth to moisten stuffing. Cover. Bake at 350 degrees for 30 – 40 min.
