Clam-Chowder



Clam-Chowder And Low Fat Chowder Ingredients

2 - 6 oz cans Clams chopped
2 C Diced garden potatoes
1 C Chopped Celery
1 C chopped onions from your garden
¾ C Butter
¾ C Flour
1 Quart Half and half (I use whole milk -see below)
1 ½ teas salt
1 teas sugar
½ teas pepper

Drain clam juice into pan ,
Add vegetables & cook in Clam juice until veg's are tender.
Melt butter, in saucepan,
add flour. Cook one minute add salt sugar & pepper.
Add half and half (or milk).
Cook until thick & smooth.
Add clams and vegetables-
stir and serve.

Note: I like to add 1 can diced up oysters with the clams. I like the flavor better than just the clams. I put the juice into the clam juice and cook the vegetables in them. I have even used 1 Can of canned milk plus 1 ½ C of water, or even regular milk for lower fat content. You want equivalent of 1 Qt liquid including the Clam & Oyster juice. Serve w/oyster crackers.
